I like to eat eggplant, but eggplant is very oil-absorbing, so I made this steamed eggplant on a whim today. The taste is excellent, and it does not need to put a lot of oil. It will definitely increase your love for eggplant.

Steamed Eggplant with Minced Meat

1. Remove the head and tail of the eggplant and wash.

2. Cut into sections and place them on the plate. To be honest, this plate is a bit small, but two eggplants are necessary for four people to eat! !

3. Chop the meat into minced meat.

4. Chop garlic into minced garlic.

5. The above ingredients are mixed in a small bowl, which are light soy sauce, aged vinegar, sesame oil, ginger, millet spicy, starch, sugar, star anise powder, and salt.

6. Put it in the steamer until the eggplant can be easily pierced with chopsticks, take out the plate and pour the steamed eggplant water, and then continue to put the plate in the steamer.

7. Heat oil in a pot, add minced garlic, sauté, then add bean paste, continue sauté. In this process, you can turn off the heat after adding the minced garlic, add the bean paste and turn on a low heat, so that the aroma of the minced garlic and bean paste can be fully exploded.

8. Add the minced meat and stir-fry until the minced meat changes color. Add warm water to cover the minced meat. Add the ingredients prepared in step 5 and cook for a while, and the flavored minced meat sauce is ready.

9. Pour the fried minced meat sauce on the eggplant, cover the pot and continue steaming for a while, about 5 minutes, then turn off the heat and simmer for a while to make the eggplant more delicious.

10. Sprinkle on shallots, out of the pot, and start to eat

Tips:

1. The grasp of salt is the most important. You can taste the salt when making minced meat sauce. Because the eggplant is not alone with salt, the sauce is a bit saltier than the usual dishes.
2. One and a half eggplants are enough for this kind of plate, but two are a little too much.
3. It tastes better when you start eating.
4. The more delicious this dish is, the more delicious it is, because the sauce is underneath, which makes it easy to serve.
