Stewed Pork Neck Bones with Sauerkraut Vermicelli, One of The Famous Dishes in Northeast China

Get the necessary materials. I left the pig neck bone. After buying the pig neck bones, scald them with water to remove the blood, and then soak them in cold water. Don't use a pressure cooker to press the pig neck bones. The pig neck bones can be bitten after being simmered for about 15 to 20 minutes.

The pork slices should not be too thin. The slices of stewed sauerkraut are thicker and delicious.

Wash the sauerkraut 3 times with water to clean the fine sand of the sauerkraut. Do not soak sauerkraut in water, as that will affect the sour and refreshing taste of sauerkraut.

Control the water after washing the sauerkraut 3 times.

Turn on the fire, heat the oil, add an aniseed when the oil is hot.

Add the sliced meat and stir fry. Some people like to put the onion, ginger, garlic and the meat first. I think it’s better to put the onion, ginger, garlic and the meat later. This is the result of repeated experiments.

Stir the meat slices to change their color, add a proper amount of cooking wine to remove the meaty smell, and continue to stir fry.

The meat slices are almost cooked, put in the pork neck bone and stir fry.

Pour 2 tablespoons of soy sauce and stir fry.

Add a bowl and a half of water, and add as much as possible, because the vermicelli will be put on at the end. The vermicelli is very soupy.

Add 3 tablespoons of salt, (season according to personal taste)

Cover the pot and simmer over medium heat. After boiling, simmer for 15 minutes. After 15 minutes, see if the pork neck bone can bite, if it is a bit hard, simmer for another 5 minutes.

At this time, soak the vermicelli in warm water for 3 minutes. The potato vermicelli I use, the vermicelli depends on personal taste, potato flour and potato flour are all fine. (Or wide noodles are also delicious)

Drain the vermicelli that has been soaked for 3 minutes in water for later use.

Put the soaked vermicelli in the pot, cover the vermicelli with sauerkraut, and simmer for 2 minutes. Taste the vermicelli when it's cooked, you can get it out of the pot.

When the vermicelli is cooked, add 1 tablespoon of chicken essence and stir evenly.
