Stir-fried Chicken Gizzards with Capers
1.
I have marinated capers for 3-4 hours. You can search for "quick homemade capers" in my recipe.
2.
After scraping the chicken gizzards with a knife to clean the dirt, wash it with hot water, then add two spoons of salt to rub each one, and then wash it with water.
3.
Then cut a thin slice so that it is easy to fry and it will be cooked. After cutting, pour a spoonful of white rice wine and cooking oil to marinate.
4.
Heat oil in a pot, add garlic slices and saute
5.
Pour in the chicken gizzards and stir-fry evenly. When the color of the chicken gizzards becomes ripe, pour in the capers, add in oyster sauce, light soy sauce, sugar, dried chili, and salt, and stir-fry evenly
6.
After the seasoning is finished, you don't need to add water, just put it on the lid and simmer for 1-2 minutes, not too long, because the tamarind is marinated on its own, and it won't be crispy for a long time.
7.
This dish is sour and slightly spicy, because the capers themselves have a spicy flavor, so they like to eat. The pepper family can add pickled peppers, millet peppers and green peppers together.
