The bacon was made by my mother herself. During the Chinese New Year, it was brought over and kept frozen in the refrigerator. Only the last bit was left. Occasionally, I used it for cooking. I miss the hometown flavor.
Cowpea is one of the seasonal vegetables. The slightly sweet cowpea provides high-quality protein that is easy to digest and absorb, appropriate amount of carbohydrates, multiple vitamins, and trace elements, which can supplement the body's signature nutrients.

Stir-fried Cowpeas with Bacon

1. Ingredients: carrots, cowpeas, bacon

2. Wash the cowpea, remove the old tendons, and cut into sections

3. Cut carrots and bacon into shreds separately

4. Heat oil in a pan and sauté the minced garlic

5. Add bacon and stir fry to change color

6. Add carrot shreds and stir fry

7. Add the cowpea and stir fry

8. Add some water and cook for two minutes

9. Add soy sauce

10. Add salt to taste

11. Finally, add chicken essence and stir well.

Tips:

Cowpeas must be fried before they can be eaten.
