Stir-fried Diced Pork with Sour Bamboo Shoots

This is the sour bamboo shoots made in my hometown.

Cut it into cubes.

Mince the ginger and garlic, and cut the pepper into small pieces.

Cut the green onions into small pieces.

The pork fat and lean meat are sliced separately, and the lean meat is mixed with a spoonful of starch and a spoonful of light soy sauce.
