Stir-fried Rice Noodles with Black Fungus, Duck Egg and Shrimp Balls

Ingredients: rice noodles, black fungus (soaked and cleaned), shrimp balls, duck eggs.

Put the rice noodles in a large basin, pour in warm water and soak until soft.

Beat the duck eggs into egg liquid.

Put the shrimp ball on the chopping board and cut into slices, set aside.

Lower the black fungus into a pot of clean water, blanch and remove.

Pour the oil in the saucepan to heat, add the egg mixture and stir fry into pieces.

Then, combine the soaked rice noodles, blanched black fungus, and sliced shrimp balls and stir fry.
