Sweet and Sour Pork Ribs

The ingredients are shown in the picture;

Wash the ribs and blanch them with warm water to remove any foam;

Put the ribs, shallots, and ginger slices in a pot of water; cook for about 30 minutes;

Proportionally adjust the vinegar sauce, balsamic vinegar: cooking wine: light soy sauce: dark soy sauce = 2:1:1:1/2 (two spoons of balsamic vinegar, one spoon of cooking wine, one spoon of light soy sauce, half a spoon of dark soy sauce), press the ribs The amount is mixed with vinegar sauce, I use a large spoon because I have more ribs;

After the ribs are cooked, remove them and marinate them in vinegar sauce for 15 minutes;

Drain the ribs;

Sit a proper amount of oil in the pot, add the ribs after the oil is hot, and deep-fry the ribs until brown red (the oil will easily spill out at this step, you can use the lid to defend yourself^_^~);

Drain the oil from the fried ribs, put the ribs back in the pot, pour the vinegar sauce for the marinated ribs, a small bowl of the soup for the ribs, add three tablespoons of sugar, bring to a boil over high heat, and simmer over medium-low heat;

After simmering for about 15 minutes, add a spoonful of balsamic vinegar (the vinegar in the front will evaporate a lot), collect the juice on high heat, then add an appropriate amount of salt and monosodium glutamate, and stir-fry evenly out of the pot~
Tips:
1. This step of frying the ribs can be omitted, and it tastes great, but the fried ribs will have a crispy texture on the outside, so they should be delicious~
