Tender Water-skiing Steamed Egg
1.
For the small village eggs purchased online, each egg is protected by rice husks. Native eggs have high nutritional value, so it's most suitable to make custard for your baby!
2.
Beat three eggs into a bowl (two ordinary eggs are enough, and the native eggs are relatively small, less than 40 grams each). The native eggs are not ordinary. The yolk is so yellow that it is bright and fresh. Beat the eggs
3.
Add water (the ratio of water to egg is generally 1:1) and salt, beat well, let stand, and use a spoon to remove bubbles
4.
Cover the bowl with plastic wrap or lid, steam a pot with cold water, turn down the heat when the water is boiled, and steam for 13 minutes
5.
Take it out, there are no bubbles at all on the surface of the custard, and the mirror is as smooth and yellow in color. Add light soy sauce and shake it to make it evenly distributed on the surface
6.
Add a few drops of sesame oil
7.
Sprinkle with chopped green onion, perfect
8.
Spoon a spoonful, like soft tofu, very smooth and without pores
Tips:
1. The eggs must be beaten first, then water and salt are added, and then they must be fully beaten;
2. The fire must be low when steaming, otherwise it is easy to have pores.
