Tofu Fish Head with Chopped Pepper

Material preparation: ratio of chili pepper; dry chili: millet spicy: bright red chili is 3:2:1. The other ingredients are matched according to your own taste.

After the fish head is cut (without cutting), add green onion leaves, salt, ginger slices, and cooking wine to marinate for 15 minutes.

Cut dried chili, hot millet, and bright red chili into tubes, chop star anise and aniseed into the bottom, slice garlic, cut ginger into large rice and mix with pepper, add salt, sugar, and MSG and marinate for 15 minutes.

Cut the tofu into pieces and blanch it in boiling water to remove and drain the water. Spread it on the fish head together with the sliced green onion, and evenly sprinkle a spoonful of light soy sauce.

The marinated seasonings are spread evenly on the fish head and drizzled with salad oil.
