Traditional Halal Snack-fried Lump

After mixing the flour and rye flour, put in the alkaline noodles and salt, slowly add the hydrated dough (the dough should be slightly harder), cover with plastic wrap and wake for 30 minutes.

Roll out into a 0.5cm thick piece.

Then cut into approximately 1cm wide strips.

Rub round and cut into small lumps of even size.

Make a pot, boil the water, add the pimple and cook it (add cold water several times when boiling, to cook the heart thoroughly to prevent pinching).

Remove after cooking, drain in cold water, and set aside.

Cut the beef into cubes.

Soak the mushrooms, remove the stalks, and cut into cubes; wash and dice green and red bell peppers; mince ginger.

Pour oil into the pot and heat, add the diced beef and stir-fry slightly, add the diced mushrooms, green and red bell peppers, and stir fry.

Add ginger, cooked lump, soy sauce, salt, and monosodium glutamate, and stir-fry evenly.

Pour the sesame oil before serving.
Tips:
1. When cutting the pimple, it should be even, and the auxiliary material should be less than the main material.
2. The pimple is not easy to taste, so add some salt when making the noodles.
3. Make the coarse grains added to the pimple noodles, according to personal preference, such as corn noodles and buckwheat noodles. But it is not advisable to add more, otherwise the noodles will easily spread.
4. Alkali is put into the noodles to make the noodles more gluten and more tasty.
