Traditional Sauerkraut Hot Pot

The first step is to prepare the broth. After the pork belly is sliced and blanched, add appropriate amount of green onion, sliced ginger, garlic cloves, hazel mushrooms, pepper, aniseed, cooking wine, add more water, and cook for 1 hour.

When the stock is cooked, pick out the pork belly and set aside. Strain the stock for later use.

The second step is to prepare sauerkraut. Pickled sauerkraut at home, shredded and washed twice.

Prepare appropriate amount of chopped green onion, minced ginger, and minced garlic. Put it in a larger basin.

Add the prepared sauerkraut.

Then add pork lean shredded pork, add appropriate amount of pepper noodles, light soy sauce, salt and pepper.

Add the noodles soaked in advance. Mix well and set aside.

The third step: prepare kelp silk. Heat up the wok and add an appropriate amount of lard.

Add the boiled pork belly, hazel mushrooms, soy sauce and sugar, and stir fry. This meat would be perfect if it was cooked in braised pork in advance, because it was a temporary intention to eat hot pot, so the meat could only be slightly braised.

Stir-fry evenly, add appropriate amount of chopped green onion and minced ginger.

Add the shredded seaweed cooked in advance and stir-fry evenly.

The fourth step: install the hot pot. Get ready for hot pot. My hot pot is divided into two parts, in fact, it is better not to divide.

Put the mixed sauerkraut noodles into the hot pot, about 8 minutes full.

Fill the fried seaweed shreds on the other side. Place a portion of the pork belly on top of the dish.

Add the prepared stock to the hot pot.

Put the lid on, turn on the heat, and cook for about 10 minutes after the water is boiled.

Open the lid and continue to fill the hot pot with cut tofu skins and soaked noodles.

Add the fried meatballs and cook for two minutes.
