Using The Oven to Make Grilled Chicken Wings-two-color Grilled Wings

First, we prepare a baking tray, spread a layer of tin foil (smooth side up) in the baking tray, and then spread the onion shreds, shallots and other spices evenly on the baking tray. At the same time, preheat the oven to 200C/400F, under fire mode (Bake).
Note: The function of tin foil is to reflect heat and to facilitate cleaning.

Put a support on the grill pan, and then spread the prepared chicken wings (face up) on the grill. Place some mushrooms in the gaps between the chicken wings and grill them together.
2 pounds (about 1.8 catties) of chicken wings, a total of 20, just cover a baking tray. In order to create a two-color effect, I used the following 2 flavors to marinate separately (at least 15 minutes, preferably overnight)
Taste one (right, dark color):
Salt, pepper, cumin, thyme, brown sugar, garlic powder
Taste two (left, light color):
Salt, pepper, honey, Zhu Hou sauce, soy sauce (the honey does not need to be diluted with water, just use the water on the surface of the chicken wings and the soy sauce to dilute it)

Bake in the oven for 30 minutes, then take out, turn over the chicken wings one by one. At the same time, increase the temperature of the oven to 450F/230C. Then put the chicken wings in and bake for 15-20 minutes, and it will be out of the pot!
Tips:
The combination of grapefruit honey + brine juice is also very good.
At the same time, I would like to remind you that if you use honey or grapefruit honey as the marinade, the surface of the chicken wings will not have obvious color before entering the oven, but don’t worry, because the sugar will form an amber-like caramel color when it meets high temperatures. Call it
caramelization.
