Xingyue Private Kitchen---special Sichuan Style Steamed Pork

First select the best pork belly to scald the skin with fire. Then wash the pork belly with warm water.

After washing and scraping the potatoes, cut them into moderately sized triangles with a knife.

Finely chop the chives, stir-fry the peppercorns until fragrant, and use a seasoning machine to powder the brown sugar. Heat the brown sugar in a microwave oven on high heat for one minute to melt and set aside.

Cut the pork belly into chunks. Cut the old ginger into fine pieces. Cut the Pixian Douban finely. The fermented bean curd is rotten.

Add a little salt, cooking wine, five-spice powder, dark soy sauce, fermented bean curd, brown sugar, Pixian Douban, minced pepper, chili noodles, chicken essence, blended oil, and minced ginger. Let it taste for half an hour.
Special note. The five-spice powder is made by myself. Pepper noodles are added. If you are buying five-spice powder, you need to add pepper noodles in this step. Because the light is dim and the flash is used, the effect is a bit distorted.

Add an egg into the meat that has a good taste. Mix it clockwise. This is a trick I learned from a senior person. It is said that the steamed meat made in this way will be dry. It will not be like many people do. It's dripping.

Then pour the cut potato pieces into the meat and mix evenly. Try to make each piece of potato stick to the seasoning.

Saute the glutinous rice, white rice, and salt in an iron pan. Add a small amount of minced pepper and chili noodles. Use a seasoning machine to grind them into coarse particles. Friends who have no conditions can buy rice noodles for steamed meat directly in the market.

Attention, this step is very important. Pour the ground rice noodles into the basin in 3 times. Keep grasping and pinching with both hands, try to make all the rice noodles stick to the pork and potatoes.

Use gauze to cushion the bottom. Spread potatoes on the bottom layer. Spread the pork evenly on top and steam it on the induction cooker for 40 minutes.

After leaving the basket, spread a layer of sesame oil evenly on the surface of the dish. Sprinkle with chives or coriander and serve.
Tips:
