Yuxiang Pork

Cut the lean pork into two thick shreds. Soak the peppers to remove the stems, seeds, and chop finely.

In a bowl, add salt, soy sauce, vinegar, white sugar, water and soy flour, add the soup and mix into the sauce. Put ginger, garlic and minced pepper on one side of the bowl; put the chopped green onion, fungus, and pea tips on the other side of the bowl.

Place the wok on a high heat and add the mixed oil. Then mix the shredded pork with salt and water soy flour.

When the oil is 70% hot, add the shredded pork and stir-fry until the seeds are loose and whitish. Put ginger, garlic and minced pepper. When the aroma is red, add chopped green onion, fungus, and pea tips and stir well. Then mix the juice evenly, stir-fry and turn, and serve.
