Zigong Small Fried Duck

Green peppers, millet peppers, cut into circles and put on a plate.

Slice ginger, green onion into small cubes, and garlic into small cubes.

Duck in a pot under cold water, throw out the scallion knot, cooking wine, boil the froth, remove the duck meat, and drain the water.

Heat up a pot and cook a few green peppercorns until fragrant.

Stir-fry the duck in a pan for 1.5 minutes.

Pour in garlic cloves, dry chili and saute until fragrant.

Add salt, monosodium glutamate, sugar to make fresh, add light soy sauce, add scallions, ginger and stir-fry for 20 seconds, a little balsamic vinegar, and stir-fry twice.
