Beef Noodles

Pour water in the pot, add half of the ginger, smash it, pour in the sirloin and boil together, add the white wine and boil it again to remove and rinse.

Cut tripe and beef tendon into strips.

Boil the water and remove it for control.

Put oil, sliced ginger, garlic, star anise, dried chili, and sirloin in a pot and stir fry together to create a fragrance.

Add the tripe and beef tendon and stir fry evenly.

Add the dark soy sauce, cooking wine, and all-spice powder and stir well.

Mix enough warm water, add green onion knots, bring to a low heat and simmer for 20 minutes. Add salt and continue for 20 minutes. Add chicken essence to enhance the flavor.

Cook the noodles and add your favorite vegetables to blanch.

Drain the noodles and scoop the beef offal soup into a bowl.
Tips:
1. Don't collect the beef offal, it's better to put noodles with soup.
2. The sirloin should be blanched in a pot under cold water. Use warm or hot water to stew sirloin.
3. Cut the beef brisket as small as possible, because the beef tendon and tripe are too soft and not delicious. I bought half-cooked beef offal. If you buy it raw, you must first cook the offal. Or the sirloin and beef tendon are as big as the sirloin, so increase the cooking time.
