Braised Abalone with Red Onion Sauce

Stick the abalone with a knife to remove the abalone from the shell, remove the internal organs and wash

Make a cross knife on the surface of the abalone, rub it with salt, and then add some salt and pepper to marinate for 15 minutes

Mince garlic and chop shallot

Add garlic and shallots in cold oil in a hot pan, add more oil, and simmer on low heat

Slightly yellow, serve, add a little scallion oil and set aside until the abalone is steamed and ready to use

Add the soy sauce to the oil with red onion crisps, mix well, refill the marinated abalone into the shell, and then scoop the red onion crisps

Put it in a pot of boiling water and steam for about 6 to 8 minutes. This depends on the size of the abalone.

Take it out, pour out the excess juice, sprinkle a little shredded chives, and pour the boiled shallot oil on it.
Tips:
1. I have made many kinds of abalone dishes, and every time I introduce the cleaning method, it is very simple, just grab it with salt;
2. The steaming time is determined by the size of the abalone, not too long, otherwise it will affect the taste.
