Braised Yellow Croaker

Prepare raw materials: yellow croaker, mint, green onion, garlic, ginger

Remove scales, gills and internal organs of yellow croaker

Flatten the garlic cloves and peel them, cut the green onion into sections, slice the ginger, and chop mint

After the pot is heated, add vegetable oil, wait until the vegetable oil is heated to six mature, slowly add yellow croaker along the side

Fry the yellow croaker on low heat until golden on both sides and remove it for later use

Add soybean oil to the pot. When the oil is 70% hot, add green onion, ginger and garlic until fragrant

Add salt, rice wine and soy sauce

Stir fry and add chili powder and star anise powder

Add a proper amount of water and stir a few times with a spatula

Slowly add yellow croaker along the edge

After the high heat is boiled, turn to low heat, cook for 10 minutes, turn off the heat when the soup thickens

Add a little chicken essence, sprinkle in mint, close the lid and simmer for a while with the remaining heat
Tips:
1. Quick-frozen yellow croaker should be defrosted in advance. In order to speed up the defrosting speed, the yellow croaker can be soaked in cold water;
2. Heat the pan and add oil. After the oil is hot, add the fish. The oil should not be too little so that the fish will not stick to the pan.
