Eggplants seem to be available all year round. They are often sold in the market. I also love to eat them, so I often buy them and cook them in different ways.
This eggplant with minced meat is very tasty and doesn't absorb much oil, so it doesn't taste greasy at all.

Eggplant with Minced Meat

1. Prepare ingredients: eggplant, red pepper, green pepper

2. Cut green and red pepper into small pieces, minced meat, chopped green onion, minced ginger, and minced garlic

3. Pour an appropriate amount of oil into the pan, add the eggplant, and fry on a medium-to-low fire. During this time, put the lid on the pan and simmer for a while

4. Fry the eggplant softly and remove it

5. Cut into small pieces

6. Restart the frying pan, stir-fry the minced meat, add cooking wine, scallion, ginger, garlic and fry until fragrant

7. Add sweet noodle sauce, fresh soy sauce, dark soy sauce, sugar and stir fry for a while

8. Add the green and red pepper and stir fry for a while

9. Pour the eggplant strips

10. Stir-fry evenly, sprinkle in white pepper, stir-fry again, serve while serving, the taste is best!

Tips:

1. It’s better to buy eggplants that are shorter and thinner, so that they don’t need to be cut off, and they will be cooked with less oil when frying.
2. It is recommended not to peel the eggplant
3. If you don’t like frying, you can cut the eggplant into sections and steam it before cooking.
