Garlic
1.
Buy the sixtieth birthday and soak it in water for 2-3 hours, remember to change the water several times in the middle. (When choosing sixties, try to choose a big one, stick out your tongue to sip water.)
2.
Boil a pot of boiling water for later use. Prepare the auxiliary materials, mince the garlic, about 4 whole garlics, and chop them into fine pieces, the finer the better.
3.
Boil a pot of clean water, add green onion, ginger, star anise, and cooking wine.
4.
After the water is boiled, add the washed flower beetle, turn on a high heat, and stir at the right time. Almost when the water is boiling, the flower beetle will all open its shell and remove it.
5.
Remove the green onion and ginger, put the flower beetle in boiling water to clean once to remove the sand, remove the drained water and set aside.
6.
Heat oil in the pot, add Pixian bean paste, stir-fry on low heat to get red oil, add green onion, ginger, garlic, pepper, dried chili, and millet (not recommended to add more, it will be very spicy after a long time) and fry until fragrant. Add oyster sauce, salt, light soy sauce, sesame oil, sugar, five-spice powder, cooking wine and stir fry evenly
7.
Add the sixties and stir-fry evenly, add a small bowl of boiling water, cover and simmer for 1-2 minutes, stir-fry and then simmer for 1-2 minutes, remove the cover and remove the moisture, turn off the water, and sprinkle with coriander, and bring out the scallions.
