The family members of the Northeast Dry Sausage have always liked to eat, and now I will make them for them. I am so happy!

Homemade Northeast Dry Sausage

1. The pork is cut into small dices with a knife. If you use pork stuffing, it will not taste good, so you can only cut it by hand!

2. Put all the seasonings in the auxiliary ingredients into the pork filling and stir evenly

3. Add the June braised soy sauce, continue to stir evenly, and let it stand for a while.

4. Rinse sheep casings several times and soak for half an hour for later use

5. If you want to rinse the inside of the casing, you can use a funnel to cover the casing and rinse under the tap.

6. Squeeze out the water after washing the casing

7. Install the funnel with a manual enema machine and prepare the enema. If you don’t have an enema machine, it’s better not to torture yourself. I made crispy sausage before and filled it with a funnel.

8. Put the casing on the funnel, if it is not good, you can shake out a piece of meat, it is easier to put on

9. After the casing is set, the tail is tied, and the enema can be started

10. Hold the junction of the casing and the funnel with your hand when filling, so that the enema is more even

11. You can fill one in a minute, which is much more efficient than when I filled it by hand

12. After filling everything, tie a knot with cotton thread every ten centimeters

13. Hang the clothes on the balcony to dry for a few days. My home is heated for about three days. The surface is dry, and the dried intestines are half smaller than when they were filled. You can feel that there is not much water.

14. Put it on the pot and steam on high heat for about 20 minutes

15. Steamed out

Tips:

The taste is good, you can try it if you like to eat dry sausage!
