1. Knead the dough, add some warm water and one gram of saccharified with Angel Yeast, and let it stand for 5 minutes, so as to better ferment. (The water is below 30 degrees, otherwise the yeast will be burnt to death) Knead the dough and add baking powder. Water is the best half of the flour. If you think the dough is too hard, you can pat it with water and knead it again. The dough should be soft. Moderate hard, but not too soft! Rub it to the pot, face, and hands! (Baking powder is aluminum-free, you can use it with confidence, if you really don’t like it, don’t put it)

2. After kneading, ferment at 28-32°C is the best. Cover with a damp cloth. It is important to maintain humidity. Fermentation is doubled. Dip some dry flour on your index finger, insert it into the center of the dough, and pull out your fingers. If the cavities are stable and shrink very slowly, the fermentation is complete! After the fermentation is complete, knead out the air in the dough, knead it round and leave it for 15 minutes at room temperature!

3. To make the filling, soak the green onions in advance with sesame oil, it will be more fragrant! Cut shiitake mushrooms with ginger, light soy sauce, white pepper, salt, chicken essence, shiitake mushrooms, stir well, and finally add scallion oil and stir evenly!

Tips:

Don't be lazy, you must wake up after kneading the noodles, and wake up for 15 minutes after wrapping!
If you have a microwave or oven for fermentation, you can put a bowl of hot water in the machine, put the noodles next to it, and close the door of the machine. Remember to replace the hot water when it is cold. The effect of fermentation is faster and better. Never turn on the machine!
