Minced Meat Sauerkraut Box

Add boiling water to the flour and stir while adding it to form a flocculent shape.

After letting it cool, add a little bit of cold water, knead it into a soft dough, and leave it for more than half an hour.

Prepare the filling when making the noodles. After rinsing the sauerkraut, simply cut it into pieces, and use a meat chopper to mince.

The chopped sauerkraut is dried and set aside.

I bought some fat and fascia from the pork loin that I bought for making floss. I also removed some lean meat (forgot to take the photo). This kind of meat has been used in stew before. Extraordinarily fragrant. This time I cooked the fascia meat and chopped it for filling. This step can be done directly with meat filling.

Chopped green onion and ginger.

Heat oil in a pot, add green onion and ginger until fragrant, add minced meat.

Stir-fry for a while, add light soy sauce, thirteen spices and stir well.

Pour in the sauerkraut that was chopped before.

Stir fry for two or three minutes, add salt to taste.

Stir-fry well and let cool to serve as filling. I prepared the above steps before going to bed at night.

Rub the dough into long strips.

Divide into small portions.

Round one by one.

Take two doughs of the same size and roll them out, as large as possible.

Spread fillings on a portion of the dough.

Cover with another portion of dough and compact the edges.

Use a fork to press out the lace.

Fill the pot with oil and heat, and put it in a box on medium to small heat.

Fry on one side until golden and turn it over.

Fry on the other side until golden brown.

The filling is big, the skin is soft, and it is delicious.
Tips:
1. I am used to preparing pasta at night to prepare dough, and get up early the next day to make it. This way, I have ample time in the morning and enough time to make the dough. The cakes made are especially delicious.
2. Because the dough is half-hot noodles and the fillings are cooked, it will be cooked thoroughly after frying on both sides at medium and low heat.
