Noodles with Eggplant Meat Sauce

Cut the eggplant into cubes and soak in salt water.

Chop the pork after washing.

Boil water in a pot, put the noodles in, boil for a while, remove them, and soak them in clear water.

Squeeze the diced eggplants to dryness and sprinkle with a small amount of flour.

Add oil to the hot pan, and stir-fry the diced eggplant.

When the diced eggplant is slightly soft, add the chopped meat, shredded ginger, and garlic to the dry and stir for about five minutes.

Then add half a small bowl of water and simmer.

When the water is fast-drying, add ketchup, soy sauce and other seasonings.
9.
Boil the water again, scoop up the noodles and add the meat sauce.
