Oily Noodles

Wash all ingredients and set aside. When cleaning small vegetables, the roots must be cleaned to prevent mud and sand. Set aside after washing.

Prepare a large bowl or basin, pour flour, add an appropriate amount of salt, and then pour the water several times while stirring with chopsticks. (The prepared water is 70ml).

Then continue to knead the flour to form a rough dough, cover it with plastic wrap, and let it rest for 20 minutes.

Put the dried chilies in a pot, stir-fry on low heat until slightly charred, and then beat into chili noodles. (You can also buy ready-made chili noodles)

Cut each small green vegetable into fours from the root, then cut the shallots into chopped green onions, and the garlic cloves into minced garlic.

After 20 minutes, remove the plastic wrap and continue to knead the dough until the surface is smooth.

Cut the smooth dough into 4 equal-sized dough portions, take a large flat plate, and drizzle some soybean oil.

Roll each small dough into a slightly longer oval shape and place them on a plate and dip them in oil.

Cover with plastic wrap and let the noodles rise for another 2 hours.

Take a piece of dough and slightly flatten it on the chopping board. Use chopsticks to press it horizontally in the middle of the dough to make a groove.

Slowly stretch outwards from the center with your hands, pull it long, and beat it on the chopping board a few times after pulling it long. At this time the initial shape of the noodles has been obtained.

From the center, where the chopsticks pressed, the noodles were torn apart, only one end was torn off, and it became a whole very long noodle. Do the same for the other three doughs.

Put the noodles and small greens together in boiling water and cook for 2 minutes, then remove them with a colander and put them in a bowl.

Drizzle with vinegar, light soy sauce, then pour garlic, pepper powder, and chili noodles in turn.

Prepare a pot and pour 2 spoons of sesame oil. Heat the oil on medium heat until the oil starts to emit white smoke. Pour the hot oil on the chili noodles and garlic in two portions.

Divide the cooked hard-boiled egg into two, put it next to the greens, and sprinkle with chopped green onion, and the delicious oily noodles are complete. Stir while it is hot and start eating.
Tips:
1. Because the time for waking up the noodles is long enough, the noodles will be cooked if they are cooked in a pot for 1-2 minutes. It should not be cooked for too long, otherwise the taste of the noodles will be bad.
2. Make noodles and wake up the noodles one day in advance.
3. The amount of chili noodles is adjusted appropriately according to personal taste.
