2. Tear off the skin of purple sweet potato and pumpkin and mash them with a large spoon. Add a little water to the spinach and use a juicer to make juice. Boil the red yeast rice in boiling water for 5 minutes. Filter the spinach juice and the impurities in the red yeast rice water for use.

3. There are many hand-cranked noodle presses on the market, which cost tens of dollars. It is easier to use this one. If you don't have one, use a rolling pin.

4. Divide the flour into five parts, add purple potato puree, pumpkin puree, spinach juice and red yeast rice water to knead into a dough, and knead a white dough for later use.

5. The dough of each color is pressed into a dough with a thickness of 1mm with a dough press. The specific steps are to first open the dough with the thickest position, then fold it, use the thinner position to press it again, then fold it again, and then select the thinner position to press.
