Sour Noodle Soup
1.
The noodles are as hard as they can be. I tried my best and knead it to this level.
2.
Make do and knead together, open it with a pole, and use the strength of the noodle press to smooth the noodles repeatedly
3.
Press the noodles and let them cool, now cut the vegetables! I chopped tomatoes very small, as big as mung beans, the more chopped the better, and I chopped some chopped green onions at random! ! ! (The tomatoes are soft and red, and the color of the soup will look good when they are fried)
4.
Just chop the leeks! ! ! When the vegetables are cut, I wash the dishes after pressing the noodles. I cut them up after washing! ! !
5.
Pour oil in the pan. When the oil is almost hot, add tomatoes and chopped green onions, stir fry a few times, add tomato sauce and continue to fry, add vinegar when fry the color, add seasonings and continue to fry for a while, and finally add water! ! ! (You can also add some spicy noodles when frying, I don’t have spicy noodles anymore, so I didn’t add it)
6.
Let the sour soup in the pot slowly simmer for a few minutes, then cut the noodles, sprinkle the pressed noodles with dry flour, put them together one by one, and cut into four pieces! As shown in the picture (the dry noodles must be sprinkled, or they stick together)
7.
The first step is to cut like this, I cut as small as fans! ! !
8.
Brother's two-step knife is used to cut diagonally, and the cut is as fine as a fan! ! !
9.
I cut two pieces of noodles, the soup is almost boiled, remove the sour soup, and boil water in the pot to boil the noodles
10.
Using the time to boil the water, I cut the remaining noodles
11.
When the boiled noodles are cooked, add the leeks, put them in and don't cook them again, stir a few times and immediately remove the pot, and add the noodles to the sour soup.
12.
The final product! ! ! Does it smell? ! ! !
