Spicy Crab

Buy the crabs and keep them in light salt water for a long time, spit out the mud and sand, then poke the crabs to death with chopsticks; clean the crabs with a toothbrush and rinse with running water

Each crab is chopped into 4 pieces; put in a bowl, add a little salt and pepper to marinate for 5 minutes

Finely chop green onions, ginger, and garlic. You can use more garlic and ginger. Add the chopped peppers according to your own spiciness, and then pack them all together; add a tablespoon of light soy sauce to a tablespoon of oyster sauce, and a teaspoon of aged vinegar. Make a bowl of sauce, I only used 2/3 of this bowl

The marinated crab pieces are sprinkled with starch, and each piece is evenly coated with starch. Be sure to dip each surface; heat the oil in the wok, add the crab pieces and fry until the color changes

After the crab pieces change color, put them aside, leave the bottom oil in the pot; add green onion, ginger, garlic, and chopped peppers, and sauté until fragrant.

Pour in the crab pieces, turn to medium heat and stir fry; cook in the seasoning sauce, stir fry to taste; sprinkle some green onions before serving
