Spicy Potato Chips

Two potatoes (choose smaller, round potatoes, slices are better) peel the potatoes, peel the garlic cloves, cut the ginger into thin slices, and wash the two small chives.

Cut the potatoes into thin slices, wash the starch on the top, boil a pot of water, pour in the washed potato slices after the water is boiled, and cook for two to three minutes. (If you like the texture, you can cook for an additional minute)

Remove the potato slices, run in cold water 3 times, drain the water and set aside.

Making ginger and garlic water: Use a small bowl to mash the garlic and ginger, (I don't have the tool for mashing garlic, so I use a small bowl and a rolling pin to make it) add a proper amount of water, and cut the shallots into small pieces for later use.

Adjust the cold sauce: add the oily pepper, pour the ginger and garlic water, the right amount of salt, a spoonful of chicken essence, a spoonful of pepper powder, a suitable amount of sesame oil, a spoonful of sesame oil, a spoonful of balsamic vinegar, a spoonful of light soy sauce, and then mix well .

Finally, pour the prepared soup on the potato chips, add the shallots, mix well, serve, and you're done!
Tips:
