Striped Dumplings

Prepare the stuffing in advance. Beat the meat into stuffing, finely chop the shallots, add a spoonful of soy sauce, light soy sauce, oyster sauce, old wine, salt, chicken essence, and a little white sugar. (Choose it by yourself) Then use the chopsticks to make a circular motion clockwise until the meat is strong and not easy to disperse. Cover it with plastic wrap and set aside.

The pumpkin is cut into pieces and steamed in a steamer until it can be pressed into a puree, then pressed into a puree and let cool.

Add the cold to warm pumpkin puree to half of the flour in batches, and make a dough by hand while adding. Add as much pumpkin puree as you want, don’t add all of it.

The other half of the flour is mixed with water. Two doughs of different colors are ready.

Then roll the dough into a rectangular shape. The dough press I used to press it is neater, and it is the same with a rolling pin. The thickness is slightly thicker than the dumpling skin. Sprinkle a little powder on the countertop to prevent sticking.

Then divide the rectangular noodles into small noodles. A layer of yellow noodles, white noodles on top, and the yellow noodles are folded in this way, and then cut into 0.5 cm strips.

Turn the strips over, the cut side is facing up, and the several strips are neatly arranged, and then use a noodle machine to press out the striped dough. If it is rolled by hand, it is recommended to wipe a little water between the two strips so that it is more sticky, and then roll it out again, and roll it vertically along the stripes.

The finished dough piece is then pressed into a circle with a mold. If you use a dumpling maker to make a dumpling, you need to find a mold that is the same size as the dumpling maker in this step.

Spread a circle of oil on the teeth of the dumpling maker. It is best to use oil to prevent sticking. If it is powdered, it is a bit difficult to clean the teeth.

Put in the dumpling wrappers, add the meat, and press it. If the dumpling skin is too dry, apply a little water on the dumpling skin before pressing it, and just apply a semi-circle.

The pressed dumplings are neat in size and shape, and they are very beautiful. After boiling it, add some light soy sauce, vinegar, and sprinkle with chopped green onion to make it delicious.
Tips:
1. If you want the stripes to be neat, the dough should not be too thin, the dough will be harder. If the dough is hard, it will be a little harder to roll it out.
2. In addition to the stripes, you can directly make yellow dumplings and ordinary dumplings.
