Homemade Cold Skin

Add 2g of water and salt to the flour and form a dough. Cover with plastic wrap and let it stand for 40 minutes.

Put half a basin of water, start to wash the dough, keep kneading to wash out the starch of the dough, the water will turn white. Re-pour some water and continue to wash the dough, repeat it several times, until the gluten becomes porous and the surface water no longer confesses.

Touch the cooked oil in a bowl, add gluten and 1 scoop of baking powder, put the gluten on the steamer and steam for 15 minutes, take out the oil and set aside.

Pour the collected starch water into a large basin and filter the residue. Let it stand for 4 to 5 hours to allow the starch to settle, pour out the clear water on the surface, and leave the white powdery water at the bottom.

Boil water in the steamer, smear the plate with cooked oil, pour the flour paste, spread it horizontally, place it on the steaming rack, cover the pot, steam on medium heat for 5 minutes, take it out, cool in cold water, peel off the cold skin, roll it up and set aside. Repeat this step to use up all the slurry water.

The cold skin is rolled and placed on a plate, and the gluten is cut into cubes.

Deep-fried peanuts, deep fry for 5 minutes on low heat, sprinkle with salt, let cool, crush and chop with a knife to make a jar of crushed peanuts, which can be used normally.
