Tempeh Meat Sauce (handmade Lao Gan Ma)

Dice lean meat, mince ginger and garlic, add sunflower oil, cooking wine, and minced ginger to the diced meat and marinate for 15 minutes.

Steam the tempeh on a high fire for 10 minutes and then slightly mash it.

Stir-fry the peanuts over medium-low heat for 4 minutes and then slightly mash them.

Stir-fry raw white sesame seeds on medium-low heat for 2 minutes, add raw black sesame powder and fry for another 3 minutes.

Put a small amount of pepper in a cold pan on medium heat and turn to low heat and stir fry for 7 minutes, then remove and grind the remaining pepper, stir fry for 8 minutes with spices.

Filter out all the spices, heat the white sugar over medium heat and fry for 3 minutes until the saccharification changes color.

Stir the marinated diced pork under medium heat for 3-5 minutes until it becomes broken and discolored. Put the tempeh on medium heat and stir for 3 minutes, then turn to low heat and continue to stir for 5 minutes.

Add minced garlic and stir-fry for 5 minutes on low heat.

Add chili noodles, stir-fry for 2 minutes on low heat, add light soy sauce, and stir-fry for 2 minutes on low heat.

Add peanuts and crushed peppercorns, stir-fry for 2 minutes on low heat.

Add the white sesame and black sesame powder, and stir-fry for 5 minutes.

Heat until the oil boils, turn off the heat and start the pot.
Tips:
Remarks:
1. Almost the whole process, stir fry slowly over low heat to avoid mashing the pot.
2. If you like spicy, you can add fresh Chaotian pepper as appropriate.
3. For Xima, the amount of prickly ash or prickly ash powder can be added as appropriate.
